予約困難の日本料理店「朔」がひっそりと営んでいます。
クルマを停めるとそこはまるでジブリの世界。
日本の原風景。山羊が放牧され、茶畑には放飼いのニワトリが駆け回っている。
6席だけのカウンター席は森の静寂に包まれて幻想的。

●食前ジュース
邪払酵素のジュース。
柑橘系の爽やかさを感じる清涼感あるジュース。
●前菜盛合わせ
・サザエの炊き合わせ
(鳥羽産サザエ、かぶ、スナップエンドウ、美杉の谷地玉蒟蒻、雲丹きんとん添え)
・小松菜、茄子、しめじの吉野仕立て(白髪ネギと生姜添え)
・甘鯛(尾鷲産)の柿の葉寿司
・新じゃがいもとしらすの当座煮
・胡麻豆腐(焼いて仕上げる胡麻豆腐)
●美杉産アマゴ
炭火焼きで1時間じっくり焼き上げて仕上げる。(黄身酢タレと胡瓜を添えて)
●穴子の黄味衣揚げ
モチモチの道明寺粉のリゾット風を敷き詰めて、穴子の衣揚げを載せて鈴木牧場のモッッァレラチーズを掛けた上からバルサミコ酢で味を整えられる。
●美杉産の三又の鹿肉
罠師「古田」さんが捕らえた鹿肉を2週間熟成させた鹿肉のロースト。蕪、ズッキーニなどの夏野菜のグリル添え

Saku" is a Japanese restaurant located in a secluded village on the border of Mie and Nara Prefectures.
Saku" is a Japanese restaurant that is difficult to make reservations for.
When you park your car, you are in a Ghibli world.
It is like a scene out of Ghibli. Goats graze and free-range chickens run around in the tea fields.
The counter seating, with only six seats, is fantastic, surrounded by the silence of the forest.

Turban shells cooked together
(Turban shell, turnip, snap pea, konnyaku and kintan kinton)
Yoshino style with komatsuna, eggplant and shimeji mushrooms (with shredded leek and ginger)
Sushi with sea bream (from Owase) and persimmon leaves
simmered new potatoes and baby sardines
Sesame pudding (sesame pudding baked and finished)
Amago (amago) from Misugi
Charcoal grilled slowly for one hour to finish. (served with yolk vinegar sauce and cucumber)
Deep-fried conger eel in yellowish batter
A bed of chewy domyoji flour risotto-style, topped with deep-fried conger eel batter and sprinkled with Suzuki Farm's mozzarella cheese, topped with balsamic vinegar to taste.
●Mimata venison from Misugi
Roasted venison caught by trapper "Furuta" and aged for two weeks. Served with grilled summer vegetables such as turnips and zucchini
